Spinach- Beetroot- Salad


Even though it feels like that little bit of summer we had here in Germany is on its definitive route to say goodbye, we still get the occasional warmer days. And in my opinion, those days are just perfect for a nice salad with, maybe, some toasted bread for lunch.



























This salad actually came together because I had some beetroot lying around and kept putting off using it.

So here it is. A nice salad that is extremely easy to prepare.





Ingredients:


Salad:

  • spinach, cut in stripes
  • beetroot, pickled, diced
  • feta, crumbled
  • apple, finely diced

Dressing:
(any store bought yogurt-dressing will work with it)
  • a tablespoon yogurt
  • a tiny bit of mustard
  • olive oil
  • salt, pepper
  • and maybe a little bit of sugar




I probably don't have to spell out how to make a salad...  
The only thing I recommend is using the same amount of apples and beetroot, but just half as much cheese. And then just as much spinach as you like.
