The lazy Dinner...

... really very lazy...

Chicken Pita



One dinner planned in the meal-planning-euphoria I was going through was chicken pita.
I’m pretty sure that serving pita doesn’t qualify as cooking at all, because you simply prepare the chicken, toast the pita bread and cut up some vegetables... As I said no ‘real’ cooking involved.

I made a guacamole to spread inside the pita bread, but again there is no cooking involved in that.





You’ll need:
  • chicken
  • pita bread
  • some dips, or sauces (mayonnaise, guacamole, ketchup)
  • salads
  • vegetables
  • some feta cheese


For the guacamole:
  • one avocado
  • one clove of garlic
  • two – three ripe tomatoes
  • two tbsp of crème fraîche


We ate fries as side dish... (Again no real cooking involved)




I marinated the chicken in an olive oil, paprika, pepper, salt and garlic mix. Put everything in a bowl and mix well, let the chicken sit for about an hour.
Now simply fry the chicken in a pan until golden J

While the chicken cooks, cut the vegetables in slices or dices that are easy to eat.
And prepare the guacamole or mayonnaise... if you decide to make them yourself. Some of the store bought dips are really good, too.

For the guacamole:
Peel the avocado and cut the garlic in really small dices. Mix that in a bowl (I used a fork) because my avocado was tenderly smooth and a blender (hand or other) was not necessary.
Now squeeze in the tomatoes. Yes squeeze... Use your hand and squeeze...
Add a little bit of olive oil and the crème fraîche and stir.
I seasoned my guacamole with salt, pepper and paprika... but most people just use salt and pepper – and that is delicious as well.


Now simply toast the pita breads and spread the dips inside. Fill with chicken, salad and all the vegetables you can think of... sounds almost healthy doesn’t it?
